Pesto Noodle Salad with Chicken
Ingredients:
For the chicken:
600g (1 ¼ pound) boneless skinless chicken breast, free range or organic
¼ cup fresh parsley, finely chopped
¼ cup fresh coriander (cilantro), finely chopped
1 tablespoon red chili, seeded and minced
1 tablespoon macadamia nut oil
½ teaspoon salt
Pepper to taste
For the macadamia pesto:
2 large cups basil leaves
1 cup macadamia nuts, raw and unsalted
Juice of 1 lemon
½ to 1 cup water
Kosher salt and ground black pepper to taste
For the salad:
110g (4 ounces) kelp noodles
1 cup snow peas
1 cup pumpkin, cubed
5 to 6 cherry tomatoes, halved
½ medium red capsicum (bell pepper), julienned
2 tablespoons sprouted lentils
Pinch cinnamon
Kosher salt and ground black pepper to taste
Method:
For the chicken:
1 – Preheat the oven to 180C (350F).
2 – Season the chicken breast with the salt and pepper. Coat it on both sides with the parsley, coriander and red chili.
3 – Heat the macadamia nut oil in an oven-proof skillet. Sear the prepared chicken for 1 minute on each side. Put the skillet in the hot oven and bake for 8 to 9 minutes, until it is completely cooked through. Let it rest while preparing the rest of the recipe.
For the macadamia pesto:
1 – Combine the macadamia nuts with the basil leaves in the bowl of a food processor. Process until the nuts are well ground and the basil is well incorporated.
2 – Add the lemon juice and season with the salt and pepper. With the motor running, pour in the water. The pesto should be smooth and creamy, and not too thin.
For the salad:
1 – Toss the cubed pumpkin with the olive oil and cinnamon. Layer it in a baking dish and bake in the same oven as the chicken -180C (350F) – until tender.
2 – After the chicken has rested, slice it against the grain.
3 – Combine the kelp noodles with the roasted pumpkin, cherry tomatoes, lentils, red capsicum and snow peas.
4 – Toss the salad ingredients with the macadamia pesto, coating the mixture well.
5 – Serve the salad with the slice chicken on top, or cut the slices smaller and toss the chicken with the rest of the salad ingredients.
